The perfect Thai meal is a harmony of different tastes, and as we say, based on the flavours of spice, sweet, sour and salt. These flavours are blended in different ways to give a wide variety of tastes and smells. The quantity of chillies (spice), fish sauce (salt), palm sugar (sweet) and lime juice (sour) are given as a guide in the recipes, and are not an absolute – so we therefore recommend that you experiment with the flavours, changing them to suit your palate. It is easy to add according to taste at the early stages, but more difficult to reduce the seasoning later.
A meal in Thailand is not divided into separate courses, instead the dishes are all brought to the table at the same time and diners help themselves to a little of each, picking, mixing and tasting. Generally, a typical Thai meal would consist of a curry, a fried dish, a steamed dish, a salad, a soup and dipping sauces, accompanied by steamed rice. It is believed that you should serve the same number of dishes as there are people round the table, so you can adjust our recipes to suit your entertaining needs.
