Salad

• Thai Salad Dressing
Serves 4

You will need:

• 2 tbsp Thai Taste Fish Sauce
• 2 tbsp Thai Taste Palm Sugar
• 3 limes, squeezed
• 3 garlic cloves, peeled
• 15g coriander leaves
• 1 bird’s eye chilli – add an extra one for more heat!

Tip:

Prepare this dressing no more than 2 hours before serving, as the flavours will dissipate with time.

Instructions

  1. Using a pestle and mortar, pound the coriander leaves, chilli and garlic into a paste.
  2. Add the Thai Taste Palm Sugar, Thai Taste Fish Sauce and lime juice. Stir until the sugar has dissolved.
